100% Whole Spelt Pasta Unique variety pasta, from the Triticum Dicoccum variety, especially appropriate for the production of dried, whole, semi-whole pasta. The spelt is an ancient cereal, popular also in the Egyptian and Greek culture, enjoying a high standing in the classic world, so much that it was the nutritional basis of Romans par excellence. It was considered the main meal also in the medieval period. The Saint, seer and curer Hildegard von Bingen (known as Saint Ildegarda) supported it for its healthy nutrition. In Marche region, this rare farming never disappeared completely, thanks to the gastronomic tradition and the handicraft (hats and baskets made by spelt straw). It was quite natural for farmers to make it a leading cultivation. Spelt is a balanced dish thanks to its acids, fats, vitamins, proteins, trace elements, etc. Rich in vitamins of A, B, C, and E groups and in minerals (zinc, copper, manganese, selenium, iron, etc.) In addition to its properties it provides a tasty and energetic meal without making heavier the intestine but rather facilitating the digestion. It is often used in diets against intolerances.
