Sardinian Malloreddus - Pastificio Trigale - Sardinian products The malloreddus or Sardinian gnocchi or ciggioneddi (= malloreddus smaller) as you hear in the north of the island, it is a type of short pasta with a shape similar to the opening of small shells, it is the most prepared traditional dish in Sardinia on protection occasions. You can eat with different meat ragout such as wild boar, lamb and sausage, and sprinkled with Sardinian pecorino cheese. The malloreddus have existed for hundreds of years, they were prepared by the housewives obtained before the balls of pasta that were subsequently crushed on ciulires, typical baskets of straw. The term Malloreddus is a diminutive of males, which in Sardinian Campidanese means bull. As a consequence, malloreddus would mean calves, as they recall the bellyted calves as they appear newborn. Malloreddus Sardinian - Pastificio Trigale - Sale typical Sardinian products We, f.lli Pinna, with the pasta factory Trigale we decided to embark on a fascinating path, handed down by our ancestors, in a sector, that of artisan pasta, as old as suggestive. It was born as a commitment to escape what we call food terrorism that invades our handouts. Giving our production a representative and emblematic name, ''Trigale'', Sardinian-Logudorese adjective meaning ''fruitful wheat'', we intend to emphasize that our production is not only fruitful wheat but exclusively Sardinian wheat, wheat of our Unspoiled and wild Contrade. The importance of raw materials for us is everything. Our main objective is to offer high quality products as commands the ancient Sardinian culinary tradition. We intend to promote the formula "Sardinia sustains Sardinia", with a production at km 0.
