Directions

Rinse 1 cup of rice. In a large pan, heat 2 tbsp olive oil over medium heat. Add rice and stir for 1-2 minutes. Add 3 cups of broth, bring to a boil, then reduce heat to low. Cook, stirring occasionally, for 18-20 minutes. Add more broth if needed. Stir in 1/2 cup grated Parmesan cheese and season with salt and pepper to taste.
