The Bresaola Carpaccio is a product that is obtained starting from the topside and underside of beef which are subjected to dry salting by sprinkling the meat with salt, ground pepper and natural flavors. Bresaola Carpaccio is distinguished by an intense ruby color and a slightly smoked flavor.
