This hot and sharp onion Sambol is referred as the mother of all Sambols. The basic ingredients that bring together layers of rich flavours of the Sambols. Small red onions are ground together with rock salt and chillies with lime juice. Quite strong and pungent and is usually had in small quantities to add heat to mellow and milky dishes. A special treat to enjoy with the traditional Kiribath (Creamy Coconut milk rice) to celebrate special occasions.
